Amanda's Thai Salad Dressing

Here is a quick and tasty Thai dressing you can whip up and store in the fridge I use it on salads, I heat it up and have it with vegetables, it is excellent with fresh beans. You can also add a little cornflour paste to it to thicken it up and have on a stir fry dish. I posted this earlier but experimented with it and added the lemongrass and lemon juice, I also added extra sugar ... it is yummo !. I don't really measure things out so you will have to taste test as you go with this, some like it sweeter, some like it with more bite and chilli in it, it is one of those versatile sauces that you just get a knack for and adapt it as you go
  • 4 tbs lime juice
  • 3 tbs oil
  • 1 tbs sesame oil
  • 1 tbs soy sauce
  • Tablespoon of brown sugar
  • 1 tbs fresh ginger, grated
  • 1/2 clove garlic, finely sliced
  • 1 red chilli, finely sliced
  • Handful fresh coriander & basil, chopped
  • 1 tbs lemon grass chopped finely
  • 2 tbs lemon juice
  •  whisk until combined
