Bacon Quiche Muffins

I just made this up as I went along so if your someone that loves to throw things together and rarely uses recipes, let alone measures things out then this is for you !, whether as snacks for the family picnic lunch or party these are yummy hot or cold.

what you need:
2 med sized muffin pans
7 eggs
about 2 cups of grated cheese ( i used Colby)
2 shallots (spring onions). chopped finely
Bacon ( minus most of the fat) chopped finely
capsicum, chopped finely
mushrooms (chopped finely)
puff pastry
salt,pepper
dried dill leaves
1 tablespoon plain flour
1 heaped tablespoon of minced garlic
olive oil spray

what to do !
1) in a non stick pan put the bacon, capsicum, mushrooms and garlic ( do not add oil) and fry until dry and any fat from the bacon has cooked off
2) In a bowl, whisk the eggs, flour, dill, pepper, shallots (spring onions)... (don't add to much salt because the bacon and cheese have sufficient), add the cheese and stir ..set aside.
3)when the bacon mixture is cooled add to egg mixture and mix well
4)with a pastry cutter or large glass cut round circles from the puff pasty sheets and place in light sprayed muffin tin ( the edges should come to the top but not overhang).
5)Preheat oven ..220 fan forced.
6). Fill the muffin tin with mixture.. ( I filled them to the top )
7) bake until nice and golden brown on top ( about 15 mins), turn out and flip upside down on a tray and return to oven and cook until the bottom of the muffin is golden, remove 
serve eat and enjoy ...
