Today's little cooking adventure, just using stuff I had in the pantry
What you need:
250gs dates roughly chopped
1 cup castor sugar
1 cup water
3 eggs
2 cups sifted self raising flour
pinch bi-carb soda
200gms butter
1/2 teaspoon vanilla essence
What to do :
1). Place dates, water, castor sugar, butter, bicarbonate of soda into a large saucepan, bring to boil over a low heat stirring to make sure it is combined well, let simmer while stirring for a couple minutes,then turn off the heat and let cool
2). Grease and line a large loaf tin.
3). Using an electric beater beat eggs and vanilla, then on low speed gradually add alternate batches of flour and date mixture, pour into greased tin.
4) Bake on 180 for 55 minutes,cake is cooked when a knife comes out clean.
(cake freezes really well ).
