Carbonara:Mushroom & bacon,with spinach & cheese tortellini

what you need:
375g pack tortellini of your choice I like spinach and cheese or veal ( yep I cheated and got the fresh ready made tortellini)  
1 tbs olive oil  
1 brown onion, finely chopped  
4 rashers shortcut bacon, chopped  
300g  brown mushrooms, thinly sliced
2 egg yolks
300ml thickened cream
1/4 cup fresh continental parsley, finely chopped
1/2 cup Parmesan cheese block

What to do: 
1. Cook the tortellini in a large saucepan of boiling water following packet directions. Drain. Set aside.
2. heat olive oil in a large frying pan over medium-high heat.
3. Add the finely chopped brown onion and chopped bacon. Cook, stirring often, for 5 minutes or until the bacon is golden. Do not over cook the onion, they should be soft not overly brown.
4. Add the sliced  mushrooms. Cook, stirring, for 3-5 minutes or until the mushrooms start to soften.
5. Reduce the heat to low. Grate ½ a cup of Parmesan cheese. Whisk egg yolks with the cream, then stir in the parsley and three quarters of the Parmesan. Add this mixture to the pan and simmer for 2 minutes or until cheese is just melted.
6.Add the creamy sauce to your tortellini and garnish with the remaining Parmesan cheese.
