This was yum and filling, I just made up the recipe tonight as the
cupboards were almost bare and these were the only fresh veges left in
the house, but I have to say it hit the spot.
what you need:
3 average sized sweet potato ( kumera)
1 brown onion
3 vegetable stock cubes
1 clove of fresh garlic
handful of fresh sage
1/2 teaspoon cinnamon and nutmeg
1/2 teaspoon dried tarragon
salt to taste
pepper
2 1/2 litres water
1 large parsnip
1 bag carrots ( about 7-8)3 average sized sweet potato ( kumera)
1 brown onion

what to do:
Cube all the veges and throw it all in a big pot,bring to boil and simmer until the veges are soft, hit it with the bamix and blend until smooth, add a little more water if needed,serve with either, a dollop of cream, sour cream, I had none so sprinkled mine with grated tasty cheese and garnish with sage leaves and pepper and some hot buttered toast on the side.
