Crispy Chicken Burrito's

What you need:
1 packet Burrito wraps
Fresh chicken tenders (as many as you need)
1 pkt Tandaco southern fried chicken coating mix
1 sachet burrito seasoning mix
1 tin dices tomato's
a little water about 1/4 cup
Iceberg lettuce, chopped

1 cup of grated cheese and 1cup of sour cream, mix together
 Salsa:
1/2 cup cooked corn kernels
2 cups seeded, chopped tomatoes (6-7 medium tomatoes)
the leaves from one bunch of fresh coriander, chopped
4 cloves fresh garlic chopped as fine as you can
1/2 an onion chopped finely
1 jalapeno or large red chilli, finely chopped seeds removed if you like it a little milder
1/2 teaspoon salt
about 1 tablespoon lime juice
To make The Sauce:

Mix all ingredients until well incorporated. Refrigerate overnight for maximum flavor.
 To Make Burrito:
1.Wash and pat dry chicken tenders and coat with seasoning mix and cook in a pan until golden brown
2. Clean the pan and add the tin tomato's and burrito seasoning and the water and simmer until it reduces and thickens, add the chicken tenders and coat let simmer until the chicken has heated through and your ready to build your burrito
3. Heat burrito wraps as per instructions on pack, place lettuce, a chicken strip or 2 on wrap top with salsa and sour cream/cheese mix. fold up bottom of wrap , then the 2 sides so they overlap each other , and your good to go,enjoy.
