I went to make these today with my fruit chutney marinade, and bugger me I only had about 2 tablespoons of soy left, so I threw this together, and I have tasted it so itsallgood, and the kids should love them as well.
What you need:
1kg of chicken wings,tips removed and cut in half at the joint, (either give the tips to the dog or freeze yo make a stock another day
2 tablespoons soy, (ideally a 1/4 cup would be good)
2 teaspoons minced garlic
2 teaspoons minced ginger
2 teaspoons tabasco sauce
2 heaped tablespoon of honey (you could use brown sugar)
2 teaspoons dijon mustard
1/4 cup apple cider vinegar
1/cup tomato ketchup
A splash or 2 of worcestershire sauce
1/2 cup of plain flour
The spoonfuls do not have to be exact, I never really measure anything out, give this mixture a taste test, and adjust to your liking.
What you need to do:
1. Whisk all the ingredients above in a bowl (EXCEPT FLOUR)
2. Wash the chicken pieces and pat dry, place the flour in a bag and the chicken pieces, shake and coat well and remove.
3. In a hot pan with a little oil brown off the chicken pieces lightly, you just want the flour to lightly go brown, not to cook the chicken
4. Place the chicken into the bowl of marinade and give a good mix, also add the pan juices to the marinade. coat well.
5. Spray a baking tray and place chicken pieces on and bake at 185 fan forced for about 45 mins of until cooked, turn chicken pieces over half way through cooking and coat with 2/3rds of the remaining marinade, and 5 minutes before removing them from the oven and the last bit of marinade.
6. Place on a serving tray sprinkled with finely chopped shallots.
