What you need:
1 1/2 skinless chicken breasts,washed and chopped into stripes or cubes
1 tin pineapple pieces
2 cup water
2/3 cup white wine vinegar
3 to 5 tablespoon soy sauce
1 1/2 cup packed brown sugar
3 to 4 tablespoons cornstarch (made into a paste first)
1 cup ketchup
2 teaspoons chopped red chilli (with or without seeds depending on your taste)
1/2 tablespoon cayenne pepper
1 tablespoon steak sauce
1 cup of plain flour
1 large capsicum red,green,or a mixture of both,chopped into stripes or cubes

1 large white onion, chopped into 1/8s
1 large or 2 small carrots sliced
1/2 stick of celery
2 tablespoons turmeric
rice
parsley, chopped
What to do
1. Coat the chicken pieces and brown in a pan,( do not overcook or the breast will dry out), remove from pan and set aside.
2. Put a little vegetable oil in the pan and fry off the capsicum, onion, celery, carrots, when almost done add the chilli, cayenne pepper mix and cook for about a minute, add pineapple pieces (reserve the juice) and cook for about another minute, remove from heat and transfer to a pot along with the chicken pieces.
Sauce:
3.Put the pineapple juice, white wine vinegar, soy sauce, ketchup, steak sauce, water, brown sugar into a saucepan and bring to the boil ,then turn down to a simmer, and add the cornflour, stirring until it thickens , make adjustments to the taste if needed, pour over the chicken and vegetable mixture and return that to the heat,and heat through.
4.boil the rice adding the turmeric to the water, when cooked add the chopped parsley , and your good to go serve and enjoy !
