Turkey Steaks "a la Amanda"

This is what I had for dinner but it would make for a great quick snack I just whipped it up out of my head with what I had in the fridge, and it was yummo !
You will need:
A precooked turkey breast (in the fresh meat section of the store) ,cut to desired thickness)
Baby cos lettuce
Cherry tomatoes (chopped in half)
1 Tin of mushrooms & stems ( drained & rinsed )
Balsamic vinegar
Brown sugar
salt, pepper
1 jar cranberry sauce
slices of vintage tasty cheese
 Method:
Spray pan with cooking spray ( I use olive oil spray) heat on medium heat
put in mushrooms and fry for a couple minutes, add turkey steaks, pan fry both sides.
when turkey is browned lightly spread top side with a good dollop of cranberry sauce and top with cheese, add cherry tomatoes ( stirring mushrooms and tomatoes to one side of the pan, add a little water 
couple tablespoons and QUICKLY cover with a lid, this will create a burst of steam and help the cheese to melt quicker)
When cheese is nicely melter remove steaks and place on a whole cos leaf, then turn the heat up a little on the pan, add a headed tablespoon of brown sugar and a good splash of balsamic vinegar  giving it a quick stir until slightly caramelized, place around turkey steaks, salt & pepper if desired ..Enjoy !
