Amanda's Tuna Mornay Bake

A favorite dish of mine is this yummy tuna bake, I hadn't made one for ages I am not a big fan of seafood, hate it actually but I can tolerate tin tuna ,so this is my recipe. Hope you enjoy it .

What you need:

425g tin of tuna in brine ( drained)
2 hard boiled eggs (peeled and chopped)
1 big stick of celery ( diced)
1 onion (diced)
1 floret of broccoli (steamed for a few minutes)
salt pepper to taste
breadcrumbs ( about a cup of)
2 cups of grated cheese ( any will do , for this I used a mixture of parmesan and tasty)
2 tablespoons of flour
2 tablespoons butter
skim milk about 2 cups
2 cups  there abouts' of cooked pasta  ( I used pennette)
lemon wedges to serve

What to do:

1. Saute the onion and celery in a non stick pan until onion is clear.
2. In a large bowl put the tuna, chopped eggs, cooked pasta, onion and celery, broccoli and a good grinding of pepper and a pinch of salt, mix well.
3. Make the mornay sauce:. In a saucepan melt the butter, add flour and cook for about a minute, gradually add milk using a metal whisk,whisk  continuously while adding the milk  when it is smooth and creamy add  1 cup of the cheese and whisk until melted.
4. Add the sauce to the tuna mix and gently stir through... transfer this to a baking dish
5. Mix the remaining cheese with about  1 cup of breadcrumbs and spread over the top of tuna, dot with butter. ( I actually spray the top with a cooking spray)
6.Bake on 180 fan forced  for about  40 minutes, if the top starts to go to brown just pop a lid on or cover with foil .
7. Serve with lemon wedges and a salad
