Buttermilk Pancakes with Berries

 What you need:

150g (1 cup) self-raising flour
1 egg, lightly whisked
2 cups buttermilk
1 tablespoon sugar 
1 teaspoon of baking powder 
pinch of salt
1/2 teaspoon pure vanilla essence 
Melted butter, to grease
125g punnet fresh berries of your choice ( I used raspberries for this)
 maple syrup or golden syrup to serve
Butter (optional), to serve

 What to do: 

1. Sift the flour and baking powder into a large bowl. Make a well in the centre. Add egg and buttermilk, sugar, vanilla and salt  Use a fork to mix until just combined, don't over mix or the pancakes will become tough
2. Heat a large non-stick frying pan over medium heat. Brush with melted butter. Pour 3-tablespoon    portions of the batter into the pan. Arrange a few berries over the surface of each. Cook for 2 minutes or until bubbles appear on the surface. Turn and cook for 2 minutes or until golden. Transfer to a plate. Cover with foil to keep warm. Repeat, with berries and remaining batter.

3. Serve with any remaining berries, maple syrup/golden syrup and butter, if desired.
