Red Lentil Patties & Chilli Lime Yoghurt

  I do have another lentil patty recipe buried on this blog somewhere this is just a slightly different version to that and sorry about the photo but the camera was on the wrong setting and well then I ate the yummo food and couldn't take the pic again .haha

 What you need:

2 cups dried red lentils or about 1/2 a pk
1 cup onion diced( medium)  
2 large carrots diced finely
2 stalks of celery diced finely

Coconut oil for the frying pan, banaban-organic-virgin-coconut-oil
Chopped fresh coriander ( I use about a small handful) Or a couple tablespoon of dried
2 teaspoons dried cumin
1/2 teaspoon of turmeric powder
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
bread crumbs,packet is fine
1 teaspoon lemon juice
2 eggs whisked
flour for coating


  Chilli Lime Yoghurt 

1 Lime, juice and zest
2 medium size red chillies deseeded and finely chopped
Greek yoghurt,about a cup
2 teaspoons minced garlic (2 cloves)
Mix all this together and refrigerate until needed

What to do: 

1.Wash lentils really well and  place in a large pot with about 1 1/2 litres of water ,add the celery, carrots, coriander, cumin, turmeric powder, salt and lemon juice.
2. Bring to boil, then turn down and simmer until most of the water has evaporated and lentils are cooked ,set aside and let cool.
3.Saute onions in a pan until clear, add to lentil mixture and bread crumbs and whisked eggs, mix well, you want the mixture to be a little wet but not to dry,I usually just add the bread crumbs until I get the right consistency
4. place in the fridge for 1/2 an hour so the mixture set a bit.
5. get a decent size handful of mixture roll into a patty, coat with flour and fry in coconut oil in a non stick pan on a medium heat until golden brown. Serve with yoghurt dressing .Enjoy
