Slow Cooker Golden Syrup Steamed Pudding

Not my recipe but i did change the milk and golden syrup quantity to try and cut a bit of sugar out of it. I wouldn't eat this all the time, but it is a bit of a treat and a great winter dessert. You could substitute the Golden Syrup with: treacle, or maple syrup

What you need:

1/2 cup Brown Sugar
40 grams Butter
2 cups Self Raising Flour
1/2 teaspoon of natural vanilla essence
1/2 cup Golden Syrup
2 Eggs
1 cup Almond Milk
1/4 cup skim milk

What to do:

  1. Turn your slow cooker onto HIGH and add 1 litre of water to the basin and place the lid on for the water to heat.
  2. Find a heat proof dish (preferably ceramic) that will fit into your slow cooker and give it a quick spray with canola oil.
  3. Add the 1/2 cup of golden syrup to the bottom of the dish.
  4. In a separate bowl, cream butter and brown sugar and vanilla until light and fluffy.
  5. Add eggs one at a time.
  6. Fold sifted ingredients and milk alternatively into creamed mixture.
  7. Spoon the mixture carefully over the golden syrup and place the container carefully into the slow cooker water bath.
  8. Cook on HIGH without removing the lid for two to two and a half hours.
  •  Serve with cream or ice cream and a little extra syrup if needed
