Vegetable & Chickpea Patties with Avocado Chilli Dressing

Ok so here we have a recipe that I made up using the pulp from the vegetable juice  waste not want not as they say. and I was happy with how these turned out ,so aside from the juice I am also getting all the fiber. from my Pulp.I got 6  medium patties, that is enough for three meals of which would of been thrown out  otherwise, and they aren't bad at all. you could use the patties for a vege burger or put in a wrap also.

What you need for the patties:

your vegetable pulp from the juicer
1 tin of chickpeas
1/4 breadcrumbs soaked in a little water (about 2 tablespoons)
1 teaspoon ground cumin
1 teaspoon of minced garlic
1 egg
organic coconut oil for frying

What to do:

1. Put all the pulp from your juice into a bowl taking out any chunks or bits of skin.
2. Add  breadcrumbs and egg, and a little flour just a couple of tablespoons
3. Drain and rinse the chickpeas and roughly mash with a potato masher and add to pulp mix
4. Add coriander ( I use the Gourmet Fresh in a tube), cumin, garlic,  mix it all up really well using wet hands,ad salt and pepper to taste.
5. Roll into patties ,and coat in flour brush off excess.
6. using a non stick pan add a splash of coconut oil and on a medium heat fry the patties until golden brown on each side, remove and drain on a paper towel.

What you need:

1 avocado
1/4 cup of Greek yoghurt
1 red  chilli, finely chopped ( I leave the seeds in )
Juice of 1 lime
Small Clove of Garlic
Small handful Fresh coriander leaves
Same of Parsley
Salt and Pepper to taste
3 teaspoons honey
1 teaspoon coconut oil

 What to do:

1. In a blender or food processor place all ingredients and blend/process until smooth and creamy. Add a dash  water or coconut oil ( I use coconut oil) to reach your desired consistency. ( I like it thick for the Patties, and thinner if it is for a salad) . adjust taste if needed
2. Serve over hot vegetable  patties and enjoy.
