Vindaloo & Meatballs

What you need for the meatballs:

 1/2 kg mince of your choice,( I used chicken and pork)
2-3 shallots ( chopped finely0
1 medium carrot ( finely grated)
2 tablespoons coriander (chopped finely)
2 tablespoons parsley (chopped finely)
salt pepper to taste
1/4 cup breadcrumbs (soaked in a little milk)
1 small egg
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon red chilli flakes
Coconut oil for frying

 What to do:

1. Mix all the above in a large bowl and make teaspoon size meatballs.
2. heat coconut oil and on a low heat brown the meatballs on all sides, don't overcrowd the pan, remove when brown and set aside,

What you need for the paste:

1 tsp black peppercorns
1 Tbsp white peppercorns
1/2 tsp whole cloves
2 tsp coriander seeds
1 Tbsp yellow mustard seeds
1 Tbsp brown mustard seeds
2 tsp fennel seeds
4 dried red chillies
2 cloves garlic
1 thumb-sized piece fresh ginger
½ tsp sea salt
3 Tbsp vegetable oil
2 Tbsp plain vinegar (white)
2 Tbsp tomato puree
1 Tbsp Tamarind paste (if you can find it)
2 fresh hot red chilli peppers

What to do:

  1. Toast the spices in a dry pan for a few minutes, stirring constantly, until the mustard seeds start to pop and everything becomes fragrant.
  2. Put the spices into a spice grinder and process until finely ground.
  3. Transfer the spices to the bowl of a small food processor and add the rest of the ingredients. Process until it becomes a smooth paste. Scrape down the sides of the machine as necessary.
  4. Store the curry paste in an airtight jar in the refrigerator. It should keep for about a month.

To make curry:

You will need :

1 onion diced
1 large tin of diced tomatoes
1 cup of frozen cut beans

What to do:

1. Add onion to pan and fry for 2 minutes.Add vindaloo paste and fry for another 2 minutes.
 ( I add the whole Jar, but about 4 tablespoons should do 4 people)
2. Add about a cup of water and let simmer until the water has evaporated,add tomatoes ,meatballs,beans and let simmer for 30 mins,gently stirring so it doesn't stick or break the meatballs
serve with boiled yellow rice, pappadums and slices of banana coated in  shredded coconut.
