Chicken Sausage Rolls

What you need:

500gms chicken mince or pork
1 medium to large carrot, grated
1 onion either diced finely or grated
1 zucchini grated ( I didn't have one for this batch though)
about a 1/2 cup fine breadcrumbs
1 teaspoon of minced garlic
handful of chopped parsley 
1/2 cup grated cheese
2 eggs. One for the mix and one for the wash
Puff Pastry. I only needed 2 sheets for this batch
good pinch of sea salt
grinding of pepper
1/2 teaspoon ground coriander
2 tablespoons hoi sin sauce

What you need to do:

1.make the wash, whisk one egg and a little water about 2 teaspoons and set aside
2. In a bowl mix the rest of the ingredients until well combined
3. take a sheet of puff pastry, brush whole surface with egg wash. now just inside one edge of the pastry and with wet hands make a long oblong sausage to the edges and roll over once so the pasty overlaps  then cut into sausage rolls ,the size is up to you, but I like to do them party size because the inside cooks quicker. brush with egg wash and bake on 185 fan forced for about 45 mins or until cooked.
4. serve with sweet chilli sauce
Note: when these are completely cool you can freeze them and reheat them when you feel like a snack.
