Ham & Vege Fritatta

Normally I would cook my fritatta in a cast iron skillet and brown it off in the oven or under a grill, but seeing though I don't have a real oven and have to use a small round bench top oven. I have had to come up with some ways to adapt a lot of my recipes So I had to cook this fritatta in the oven then flip it out of the pan. and replace it back in the pan to cook the bottom. I was worried about it drying out to much while the potatoes browned so I added some cheese on topof the potatoes  and when that browned I had to flip in back out of the pan . Quite a bit of mucking around but the end result was pretty good. T
his mixture was enough to make 6 muffins and a large flan tin so it feeds a few people.

What you need:

8 eggs
A slash of thickened cream
1 large potato
1 cup of diced leg ham
1/2 diced capsicum
1 grated zucchini
1 grated carrot
1 diced red onion
1 large peeled and diced mushroom ( or a few small ones)
1-2 teaspoons of ground black pepper
2 teaspoons of minced garlic
Cheese and type will do Grated

What to do:

1.Peel and slice potatoes, roughly 2ml thick. Cook in the microwave until just tender drain and rinse under cold water to stop the cooking process. Set aside.
2. In a large pan cook the onion, capsicum and garlic with a little butter until they soften. Transfer to a large bowl.
3. In the same pan cook the zucchini and carrot. the transfer to the bowl with the onions
4. Cook the diced ham just enough until it starts to brown and add that to the bowl as well
5. Whisk all the eggs in a bowl add the pepper and splash of thickened cream and 1/2 cup of grated cheese
6. Spray the non stick flan tin or muffin tins with vegetable spray. and arrange potatoes on the bottom overlapping each one, work from the outside to the middle
7. Pour over the egg mixture and bake until cooked. My flan took about 30 mins 205 fan forced. The muffins took about 18 mins.
Note: Add some cheese to the top of the fritatta in the last few minutes of cooking if you like
