Mac & Cheese with bacon and onion

It is winter in Australia and starting to get a bit chilly, so it is comfort food time and there is nothing on earth more comforting than mac & cheese. It is always a hit either on it's own or as a side. But one thing is that is certain stopping at one bowl is hard to do. I am sure I did a version if not the same on here once before and I like celery in mine but didn't have any so bacon it was  I skipped the bread crumb top  because someone used the breadcrumbs last week and didn't tell me so I had none of those either. No worries the baked parmesan cheesy top was sufficient..This is so easy to make, your family and friends will love you for it and you know what they are eating is fresh without the preservatives of packet stuff. By all means add whatever you like to your mac and cheese

What you need:

1 packet macaroni   ( just cooked)
Grated tasty cheese
Grated sharp cheese ( I use vintage)
Parmesan cheese
milk about 3-4 cups
3 tablespoons butter
3 tablespoons plain flour
3-4 bacon rashers diced
1 large onion diced
2 large cloves of garlic minced
Smoked paprika
salt and pepper

What to do:

1) Cook macaroni in boiling water until just coked, drain and set aside
2) In a frying pan cook the onions and diced bacon and garlic until the bacon start to crisp and the onions are clear remove from heat, set aside in a bowl.

 Cheese sauce:

3) In a saucepan on low heat cook butter and flour until it is a smooth paste, gradually add milk, and whisk the hell out of it so it doesn't go lumpy and it is smooth and silky, add smoked paprika keep whisking, remove from heat, add the cheeses, keep whisking, return to a low heat until sauce becomes smooth and silky and cheese has melted, add a good sprinkle of ground pepper, mix in well, add onions and bacon, mix then add the macaroni, combine well
4) In a deep casserole dish place the macaroni, top with  parmesan cheese, sprinkle with paprika.
5) Bake with lid on for 25 mins, (fan forced 230),remove lid and bake for 15 mins or until top is browned
