Chicken Soup

 Nothing tastes better than homemade chicken soup on a cold winter's day or if your felling a little under the weather. This tasty recipe is easy and quick to do, you can even add pasta or noodles to it if you like, but my friends prefer it just like this with some nice crunchy sourdough.

What you need: 

2 skinned chicken breasts
2 large carrots, diced
4 sticks of celery, diced
2 onions, diced
3 oxo chicken stock cubes
2 tablespoons of minced garlic
2 liters of water
Herbs, I used: rosemary, thyme, sage, parsley, dill, turmeric, bay leaf
salt and pepper to taste

What to do: 

1. Place all the vegetables and garlic in a large pot with a little olive oil and cook for about 5-6 mins or until the onions are clear
2. Add all the spices, crumbled stock cubes, salt and pepper and mix well.
3. Add the water and the chicken breasts bring to the boil. and continue to boil until the chicken is completely cooked. May take about 30 mins depending on the size of your chicken breasts.
4. Remove chicken breasts from pot and shred with a fork. Add chicken back to pot and simmer for a further 15 mins. and serve.
Note: You can add pasta or noodles to your soup, beans, chilli or anything you like it is up to you really.
