Pepperoni Pizza in a Bowl

I have always loved pepperoni. When I was sixteen I threw this together and ever since it has been my favorite pasta dish of all time. It is so super simple to make so if your a pepperoni lover like me this could be your next favourite comfort food dish.


Ingredients:

1 x stick of pepperoni, sliced thinly then cut the round slices in half again ( or you can leave them as round slices) 

1 x large onion diced

1 x red or green capsicum diced

2 x teaspoons minced garlic

2 x teaspoons minced chilli

Mixed herbs

sliced button mushrooms (optional)

Black pitted olives cut lengthwise in half (the amount is up to you)

penne or twirl pasta cooked al dente

olive oil

tomato paste

1 tablespoon sugar

1 x jar of passata or pasta sauce

What to do:

1. Cook pasta in boiling water with salt and a little oil.  ( I also add a few dried herbs to my pasta while it is cooking for extra  flavour). drain and set aside. Do keep about 4-5 tablespoons of the  pasta water and add it to the pepperoni sauce and stir through... before adding the pasta .... adding that bit of starch liquid makes the sauce stick better to the pasta ...

2. In a pan put a good splash of olive oil the pepperoni, onions, capsicum, and fry until the onions are clear and the pepperoni is  cooked through . The pepperoni releases all the good stuff in this dish.

3. Add the garlic, chilli, olives and mushrooms ( if your adding them), continues frying on low untill everthing is nice and cooked.

4. Add the passata, tomato paste,sugar and mixed herbs, simmer on low for about 10 minutes the add the pasta and stir though.

5. Place the mixute into a baking dish and top with your favourite cheese, grind some pepper over the top and bake in the oven 180 degrees for 20 minutes or until  the cheese is golden brown

6. Serve and enjoy!

 Note: This tastes so much better the next day, when all that pepperoni goodness has a chance to seep into the pasta.
