Homemade comfort food that the family will love. My own recipes and some favorites that will have them wanting more. This isn't master chef, just good homemade food. Being a pensioner on a budget a lot of my recipes come about by just using what I have in the pantry and sometimes that isn't a lot, but one thing I am famous for is my Spaghetti sauce.

Comforting Chicken Soup This comforting chicken soup will get you through the winter months and help to ward of the nasty winter bugs, it also has anti-inflammatory herbs and spices. . the is no added salt, no preservatives, just wholesome goodness, the whole family will love. Rich & Creamy Homemade Ice Cream

I have tried lots of recipes off the net, I don't have an ice-cream maker and wanted something easy to whip up and not loaded with sugar, all the ones I tried were edible, some better than others yet I kept running into the same problem the ice-cream set solid or was a little to icy, I mean they were fine if you let them thaw for a bit on the bench, It is winter here right now so that wasn't happening quick enough for me. Well I finally worked out a recipe that is as close to perfect for homemade ice-cream as it can get I think. It is super rich and creamy, not overly sweet. So I think you will like it. I love this ice-cream because I know what is in it, and it doesn't have all the preservatives that supermaket ice-cream has. Baked Lemon, Lime Cheesecake

What you need: For the Base: 2 1/2 cups Uncle Toby's Traditional oats 1/2 cup of almond meal 100gs melted butter 3 tablespoons of honey For the filling: 250g tub mascarpone 600g cream cheese at room temperature 2 eggs,(80g) plus 2 yolks zest 2 lemons, juice of 1 zest 1 lime, juice of 1/2 4 tbsp plain flour 175g caster sugar ( just over 3/4 of a cup) I used just under 1/4 a cup and it turned out fine. if your worried about the amount of sugar For the topping: 1 cup sour cream ½ teaspoon vanilla essence 3 teaspoons lemon juice 4 tablespoon icing sugar nutmeg for sprinkling handful raspberries What to do: 1. Heat oven to 185C/fan 160C/gas 4. Line the bottom of a 23cm springform tin with greaseproof paper. 2. Mix the ingredients for the base really well. Press into the tin. Spanakopita Sausage Rolls

I love Traditional Greek Spanakopita So I am always making slight variations on this depending on what I have in my pantry. These sausage rolls can be cooked, cooled, and placed in zip lock bags in the freezer to be thawed and heated up later, I prefer to do them in the oven but they can be heated in the microwave as well.Serve them with a salad, by themselves, or with a nice sauce. Prune Balls

So at 53 it was time to go for a yearly check up at the quacks. The news wasn't great I was told my sugar levels are up...borderline diabetes to be exact with a blood sugar level of 5.8, this is despite the amount of walking I do at the beach, he isn't sure why they are up, is it just my eating or whether it is hereditary. Bechamel Cheese Sauce with egg yolk

I love bechamel sauce but it just isn't the same without egg yolks not only does it make the sauce richer, but it rises and turns out light and fluffy. Maybe it is the secret trick that I have that makes people fall in love with my lasagne's and Moussaka. It is just the way I have always done it. What you need: 3-4 tablespoons of unsalted butter 4 heaped tablespoons plain flour 2 cups of skim milk 2 egg yolks, whisked well1 1/2 teaspoons of nutmeg 1⁄2 teaspoon ground black pepper 1 cup of grated tasty cheese 1 cup of grated mozzarella cheese What to do: 1. In a saucepan place flour and butter on a medium heat and cook off until butter is melted and well combined ( about 2 minutes, be careful not to burn the butter ) Use a whisk not a spoon this will ensure you get out any lumps . 2. Homemade Butter, "how to"

WHY? because butter tastes better and it is fun to do . Unless you have a cheap and plentiful supply of cream – a cow grazing in the garden, say – you're unlikely to want to make your own butter day in, day out. But for a special occasion, to go alongside homemade crumpets or sourdough bread, perhaps, it's the icing on the cake. For 400-450g of butter you'll need: 900ml thickened cream. Let this come to room temperature while you prepare a few litres of ice-cold water. Use some of this to chill a large mixing bowl, two stiff spatulas and the blades of an electric whisk. Empty out the mixing bowl, pour in the cream and beat it at a high speed for about 10 minutes. First the cream will thicken, then it will make soft peaks and eventually it will become stiff and form crumbly-looking clumps. Keep on whisking and suddenly you'll find a whitish liquid pooling at the bottom of the bowl. The liquid is buttermilk, which you can drink or use in baking. ( I will be making butt...

Slow Cooker Cabbage Rolls

INGREDIENTS: 1 Head Fresh Cabbage ( I used pointed cabbage for this) but you can use any cabbage 1 Large Onion (Diced) 900g Extra Lean Ground Beef 1 Cup Cooked White Rice (I like to just under cook the rice for this slow cooker recipe) 1 Large Egg 3 Teaspoons minced garlic 1 Teaspoon Salt 1 Teaspoon Freshly Ground Black Pepper 1 Large jar of passata sauce 3 Tablespoons red wine vinegar mixed with 2 Teaspoons of sugar Herbs: I don't measure my herbs use as much or as little as you like, I tend to like more dill in mine. Dill leaf, Basil, Paprika, Mixed Herbs, Parsley. WHAT TO DO: Core the head of cabbage and carefully remove each individual leaf off of the head and wash to remove dirt. Reserve a few chopped leaves to line the bottom of the slow cooker Place clean cabbage leaves in a pot of boiling water and cook for a few minutes, drain, separate gently place the leaves on a clean tea towel, set aside. Pepperoni Pizza in a Bowl

I have always loved pepperoni. When I was sixteen I threw this together and ever since it has been my favorite pasta dish of all time. It is so super simple to make so if your a pepperoni lover like me this could be your next favourite comfort food dish. Ingredients: 1 x stick of pepperoni, sliced thinly then cut the round slices in half again ( or you can leave them as round slices) 1 x large onion diced 1 x red or green capsicum diced 2 x teaspoons minced garlic 2 x teaspoons minced chilli Mixed herbs sliced button mushrooms (optional) Black pitted olives cut lengthwise in half (the amount is up to you) penne or twirl pasta cooked al dente olive oil tomato paste 1 tablespoon sugar 1 x jar of passata or pasta sauce What to do: 1. Cook pasta in boiling water with salt and a little oil. ( I also add a few dried herbs to my pasta while it is cooking for extra flavour). drain and set aside.
