Sweet Potato, Spinach and Ricotta Frittata

What You need:

1 large sweet potato, cubed
1 large or 2 small onion, sliced into rings
1 pkt of frozen spinach
4-5 eggs whisked
1 tablespoon of minced garlic
salt and pepper to taste
1 small tub of smooth ricotta
Parmesan cheese, shredded or grated
flan or deep pie dish

What to Do

 1. In a glass microwave proof bowl with lid  add 1/2 a cup of water and cook the cubed sweet potato in the microwave for about 10 minutes or until they start to soften, drain
2.in a hot pan add a little butter and lightly fry the onions until clear, remove from pan and set aside in a bowl
3. add the garlic and spinach to the pan and cook until the spinach dries out and most of the water has evaporated.
4 Add the onions and sweet potato back to the pan and gently mix cook on a low to medium heat until the sweet potato is cooked all the way though.
5.spray or grease the flan dish and transfer the sweet potato mixture to the dish spreading evenly, dot the top with ricotta cheese ( as much as you like), and sprinkle with a good covering of parmesan cheese.
 6. In a bowl whisk the eggs with a fork add the salt and pepper, gently pour of sweet potato and back on 185 Fan forced for about 45 minutes until the egg is cooked. enjoy!.

  1. That looks great! Although for us I'd use a regular potato as we aren't fans of sweet potatoes. I didn't know you could do a frittata in the oven in a dish. All the recipes I see say to use a cast iron skillet, which I don't have (and not buying).
