Tasty Meatloaf

I love meatloaf, this was a staple in my house growing up. I make quite a few different versions of it and this is just one of them. it is really tasty.  so give it a try.

What you need:

1/2 kg lean topside mince
250g sausage mince
1 x grated carrot  ( I use the fine edge of the grater)
1 x large onion grated
1 heaped tablespoon of sour cream
1 x heaped teaspoon of dijon mustard
A good pinch of salt and some pepper for taste
1 x heaped teaspoon of minced garlic
herbs, about a teaspoon of each: tarragon, thyme, dill, sage.
GLAZE: mix together:
1/2 Cup of tomato sauce
1x heaped tablespoon of brown sugar
1 heaped teaspoon of mustard powder
A splash of worcestershire sauce or soy
1x heaped tablespoon of marmalade or plum jam

1). MIX ALL THIS UP IN A BOWL UNTIL WELL COMBINED. PLACE IN A GLASS MEATLOAF DISH AND BAKE ON 185 FAN FORCED FOR ABOUT AN HOUR.
2). QUITE A BIT OF THE FAT WILL HAVE BEEN RELEASED FROM THE MEATLOAF BY NOW AND I LIKE TO DRAIN THAT OUT OF THE DISH
3). AFTER YOU HAVE DRAINED THE FAT OUT YOU CAN POUR THE GLAZE OVER THE MEATLOAF AND RETURN TO THE OVEN AND COOK FOR ANOTHER 45 MINS TILL DONE.
4). REMOVE MEATLOAF FROM PAN. YOU CAN THICKEN THE REMAINING SAUCE IN THE PAN WITH A LITTLE CORN STARCH  FOR POURING
5). SERVE WITH MASHED POTATO AND VEGES.
