Being a pensioner on a budget a lot of my recipes come about by just using what I have in the pantry and sometimes that isn't a lot, but one thing I am famous for is my Spaghetti sauce.

Baked Lemon, Lime Cheesecake

What you need: For the Base: 2 1/2 cups Uncle Toby's Traditional oats 1/2 cup of almond meal 100gs melted butter 3 tablespoons of honey For the filling: 250g tub mascarpone 600g cream cheese at room temperature 2 eggs,(80g) plus 2 yolks zest 2 lemons, juice of 1 zest 1 lime, juice of 1/2 4 tbsp plain flour 175g caster sugar ( just over 3/4 of a cup) I used just under 1/4 a cup and it turned out fine. if your worried about the amount of sugar For the topping: 1 cup sour cream ½ teaspoon vanilla essence 3 teaspoons lemon juice 4 tablespoon icing sugar nutmeg for sprinkling handful raspberries What to do: 1. Puff Pastry Vanilla Slices & Passionfruit Icing

Wow I am 54 years old and have never made Vanilla Slices, well I guess that is because I was never a big cake eater or sweets person except for chocolate and cheesecake so today I thought I would have a crack at it..Now all would of probably gone a little more smoothly if I had a proper oven but I only have a round benchtop oven. First problem!..Trying to put a square peg in a round hole so to speak. Cooking the puff pastry sheets the recipe called for 2 sheets and I ended up having to use 4 and wasting almost half of that trying to cut a nice fit for my tray..Finally I managed it.. Problem number 2 !.. I just wasn't sure if the custard would set, it looked good in the saucepan. anyway just to be on the safe side I added a tiny bit of cornflour to be sure, sweet. Oat Base Cacao Swirl Cheesecake

OK .. well I am still on track doing the low carb and sugar free thing... but I have been hanging out for a cheesecake so I came up with this recipe after some thought.. and it turned out delicious. Honey is what I use to sweeten my cooking, straight from the hive. Artificial sweeteners are a no go for me personally the word artificial is enough to make me run a mile and as much as I am told Stevia is a plant it still goes through a processing and the taste just puts me off as does the cost of it.. . Honey is food of the Gods and as natural as you can get plus I am lucky enough to live in an area where there is plenty of honey producers.. This recipe is great for diabetics, pre-diabetics. As a pre-diabetic that turned those results upside down within 2 months. I read a lot of stuff and the diets people were on HFLC, the ADA diet recommended by most doctors and nutritionists. and I found something wrong with all of them especially the HFLC diet... Deluxe Curry Chicken

Who doesn't love a good curry?. It is always a favorite in my house usually the hotter the better. and I can make lots of different varieties of it, Indian, Thai etc. I Remember growing up and mum made Curry a lot Back then I thought it was pretty good. and she always used "keens curry powder". I prefer to make my own curry blend from herbs and spices. the other night we had the dilemma of "what are we going to have for dinner?". . Being the middle of winter and a pretty bare pantry we decided curry was the go but alas my spice rack is looking fairly dismal. so I threw together a basic curry using good old keens curry powder and a fer bits and pieces and made curried sausages. I can't even remember the last time I had eaten that, and it was way better than I ever remembered it was. Real Chai Latte

My recipe for Chai Latte A must add to your daily coffee fix for an added boost of goodness What you need: 2 cup of coffee whitener 2 heaped teaspoons of ground dutch cinnamon 1 heaped teaspoon of ground ginger 1 heaped teaspoon of ground cloves 1 teaspoon of allspice 1 heaped teaspoon of ground star anise 1 heaped teaspoon of ground cardamom Mix all this together and store in an airtight jar or container. Spanakopita Sausage Rolls

I love Traditional Greek Spanakopita So I am always making slight variations on this depending on what I have in my pantry. These sausage rolls can be cooked, cooled, and placed in zip lock bags in the freezer to be thawed and heated up later, I prefer to do them in the oven but they can be heated in the microwave as well. Serve them with a salad, by themselves, or with a nice sauce. What you need: 1 packet of ready made puff pastry 500g tub of ricotta good handful of grated Parmesan cheese 1 packet of frozen chopped spinach 1 onion diced finely 1 tablespoon of minced garlic 1 small carrot grated 1 large egg lightly beaten about a cup of cooked jasmine rice pinch of nutmeg 2 teaspoons dill 2 teaspoons lemon juice salt and pepper to taste finely chopped parsley about 3 tablespoons Egg wash ( 1 lightly beaten egg and 2 tablespoons of cold water ) What to do: 1. Parmesan,yoghurt chicken tenders with beans and spinach

One of those weeks where there is very little in the kitchen and I was starving, normally I don't eat packet frozen products but will admit to keeping a couple boxes of Inghams chicken tenders in the freezer and tinned stuff in the pantry is a must, so this is what I came up with for today's lunch and dinner ,and I have to say it was pretty tasty. What you need: 4-5 heaped tablespoons greek yoghurt 1 cup grated parmesan cheese 1 tablespoon minced garlic 1 box Inghams frozen crumbed chicken tenders ( I used sweet chilli ones for this) 1x frozen packet of spinach 1x tin of mixed beans salt, pepper 1 nob of butter, about a tablespoon ( unsalted) A squeeze of parsley and coriander ( I used gourmet garden ) they come in handy and they are in the frest food section at coles What to do: 1. Multigrain and Oatflour Bread ( Lower Carb) Bread Machine

So I made my own oat flour as buying almond flour is so damn expensive and oats are really cheap and the flour is easy to make. I wanted to make my multi-grain premix a little less carb. so I substituted some of the flour with oat flour. The result was fabulous I have never eaten a bread that was so filling and satisfying one piece of toast was enough. I love this bread and surprisingly this keeps really well Bread Machine used: Breville Baker's Oven makes a 1kg loaf Place ingredients into the bread machine tin in the order that they are written. Luke warm water 370mls Light olive oil 3 tablespoons Salt 2 teaspoons Honey 1 1/2 tablespoons Laucke Multigrain pre-mix bread machine flour 2 cups ( you can use any bread machine wholemeal pre-mix Oat Flour 2 cups (see note) Bread improver 2 teaspoons Skim milk powder 2 tablespoons TandacoYeast 1 sachet (roughly 2 teaspoons) Cook Setting is : Wholewheat: b-medium crust. Little Drunk Rum Balls

When a guest left a half bottle of rum after a visit it sat in the cupboard as I don't drink it. But hell I eat these babies so today I made rum balls, yummy mouthfuls of stress relief, just keep these away from the kiddies. I can't remember the last time I had one of these probably 30 years ago at least. and Oh my gosh theses are lush..! What you need: 350 g chocolate cake mix (any cheap basic mix will do ) 1/2 cup Bundaberg Rum 200 g sweetened condensed milk (give or take) 1 tablespoon instant coffee powder 1 tablespoon cocoa powder 1/4 cup hot water 2 x 375 blocks dark cooking chocolate 4 x 150 g chocolate sprinkles What to Do: 1. Bake cake as per the packet instructions and allow to cool. 2. Crumb the chocolate cake into fine crumbs. 3. Dissolve the cocoa and instant coffee in hot water and then toss evenly through crumbs. 4.
